Method
 

Step-by-Step Instructions
  1. Slice 2 large yellow onions into 1/8-inch thick rings.
  2. Add the sliced onions to the pot and cook over medium heat for 30–35 minutes until dark golden brown.
  3. Stir in 4 minced garlic cloves and a pinch of oregano, paprika, and red pepper flakes, cooking for an additional 30 seconds.
  4. Pour in 4 cups of water and the beef bouillon, adding half of the evaporated milk.
  5. Bring to a boil, then stir in 12 ounces of orecchiette pasta and simmer for 11–14 minutes.
  6. After cooking, remove from heat and stir in 1 cup shredded Gruyere and ½ cup freshly grated Parmesan cheese.
