Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C).
  2. Blend together chipotle peppers, adobo sauce, vegan yogurt, garlic, maple syrup, salt, and paprika until smooth.
  3. Cut the cauliflower into bite-sized florets and toss with the spicy sauce in a mixing bowl until well-coated.
  4. Spread the cauliflower on a baking sheet and roast for about 40 minutes, tossing halfway through.
  5. Mash the avocados in a bowl, mix with vegan yogurt, cilantro, lime juice, garlic, and salt until creamy.
  6. Warm the tortillas in a skillet for about 30 seconds on each side.
  7. Assemble tacos by layering avocado crema and spicy roasted cauliflower in warm tortillas, adding optional toppings.
  8. Serve warm and enjoy with a side of black beans or corn salad.
