Method
 

Step-by-Step Instructions
  1. Preheat your oven to 425°F (220°C).
  2. Carefully chop the tomatoes, zucchinis, carrots, bell pepper, and onion into even pieces. Slice the top off the garlic bulb.
  3. Drizzle the chopped vegetables with olive oil and toss gently. Roast the veggies for about 35-40 minutes.
  4. Once roasted, remove the veggies from the oven and allow them to cool slightly before transferring them into a blender. Add vegetable broth and puree until smooth.
  5. Pour the blended mixture back into a pot and warm it over medium heat to simmer.
