  • 1 cup Jasmine Rice Rinsed for best texture
  • 1.75 cups Water Essential for cooking
  • 2 tablespoons Unsalted Butter Can substitute with coconut oil
For the Flavor
  • 1 can Crushed Pineapple in Juice Do not drain
  • 0.5 teaspoon Kosher Salt Sea salt can be used
  • 1 tablespoon Granulated Sugar Optional for extra sweetness
For the Finishing Touches
  • 0.5 whole Fresh Lime Juice Freshly squeezed is best
  • 2 tablespoons Chopped Green Onions For garnish

Method
 

Steps
  1. In a medium saucepan, add 1 cup of rinsed jasmine rice, 1 ¾ cups of water, 2 tablespoons of unsalted butter, 1 can of crushed pineapple with juice, ½ teaspoon of kosher salt, and 1 tablespoon of granulated sugar, if desired. Stir everything together gently until well mixed.
  2. Place the saucepan over medium-high heat and bring the mixture to a boil. This should start bubbling vigorously within about 5 minutes.
  3. Once boiling, reduce the heat to low and cover the saucepan with a tight-fitting lid. Allow to simmer gently for about 15-20 minutes.
  4. After cooking, remove from heat but keep the lid on for 5 more minutes to steam the rice.
  5. Squeeze the juice of half a fresh lime over the fluffy Pineapple Rice and mix gently.
  6. Transfer the Pineapple Rice to a serving dish and sprinkle with finely chopped green onions.
