  1. Begin by gathering your fresh ingredients for the Mediterranean Chicken Stir Fry. Chop the chicken breasts into bite-sized pieces, slice the zucchini and red bell peppers, and dice the red onion. Mince the garlic and halve the cherry tomatoes.
  2. In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Add the seasoned chicken pieces and sauté for 5-7 minutes until golden brown and cooked through. Transfer the chicken to a plate, leaving drippings in the skillet.
