  • 2 tablespoons Maple Syrup or Brown Sugar/Coconut Sugar
  • 2 tablespoons Coconut Aminos or Tamari/Soy Sauce
  • 1 tablespoon Rice Vinegar
  • 1 tablespoon Toasted Sesame Oil
  • 1/2 teaspoon Red Pepper Flakes omit for milder flavor
  • 1 tablespoon Arrowroot Powder or Cornstarch
For the Filling
  • 1 tablespoon Olive Oil or another neutral oil
  • 1 pound Ground Beef substitute with pork, bison, or venison
  • 3 cloves Garlic minced
  • 1 tablespoon Fresh Ginger grated
  • 1 medium Red Bell Pepper diced
  • 1 cup Shredded Carrots
  • 2 stalks Green Onions sliced
  • to taste Kosher Salt
  • to taste Ground Pepper
  • 2 tablespoons Sesame Seeds optional
  • 8 leaves Boston Bibb Lettuce for wrapping
  • 1 cup Steamed White Rice or Cauliflower Rice optional for serving

Method
 

Step-by-Step Instructions
  1. In a measuring cup, whisk together maple syrup, coconut aminos, rice vinegar, toasted sesame oil, and red pepper flakes to create the sauce. Add arrowroot powder and mix until smooth. Set aside.
  2. Heat olive oil in a large skillet over medium-high heat. Add ground beef and cook for about 5 minutes until browned, breaking it apart with a spatula.
  3. Stir in minced garlic and grated ginger. Cook for an additional 1-2 minutes until aromatic.
  4. Add diced red bell pepper and shredded carrots to the skillet. Cook for 3-4 minutes until vegetables are tender.
  5. Pour the sauce over the beef and vegetables. Reduce heat and simmer for 2-3 minutes, stirring until coated.
  6. Remove from heat and stir in sliced green onions.
  7. Take lettuce leaves and spoon the beef mixture onto each leaf. Garnish with sesame seeds and serve immediately.
