Ingredients
  

For the Chicken
  • 1 pound Chicken Breasts Cut into uniform cubes
For the Vegetables
  • 2 cups Bell Peppers Chopped, any variety
  • 1 cup Onions Chopped, red or yellow
  • 1 cup Zucchini Chopped, can substitute with yellow squash
  • 1 cup Cherry Tomatoes Halved, grape tomatoes work too
  • 1 cup Broccoli Florets Chopped, can substitute with asparagus or green beans
For the Seasoning
  • 2 tablespoons Olive Oil Can substitute with avocado oil
  • 1 tablespoon Italian Seasoning Can substitute with herbes de Provence
  • 1 teaspoon Garlic Powder Or use fresh minced garlic
  • 1 teaspoon Paprika Use smoked paprika for extra kick
  • 1 teaspoon Salt To taste
  • 1 teaspoon Black Pepper To taste
  • 2 tablespoons Fresh Parsley For garnish, can substitute with cilantro
Miscellaneous
  • 4 sheets Aluminum Foil Heavy-duty recommended

Method
 

Cooking Steps
  1. Preheat your grill to medium-high heat or oven to 400°F (200°C).
  2. Wash and chop all chosen vegetables into bite-sized pieces.
  3. Cut chicken breasts into uniform 1-inch cubes.
  4. In a large mixing bowl, combine chicken and prepared vegetables.
  5. Drizzle olive oil and sprinkle in seasoning, then toss to coat.
  6. Tear off large squares of aluminum foil and place portions of mixture on each.
  7. Seal the foil packs tightly to contain flavors and moisture.
  8. Cook sealed packs on the grill or in the oven for 20-25 minutes.
  9. Rest the foil packs for a few minutes before carefully opening.
