Method
 

Preparation Steps
  1. In a large mixing bowl, combine the ground chicken, finely chopped onion, minced garlic, chopped parsley, ground cumin, ground coriander, salt, and freshly cracked black pepper. Use your hands to mix everything together until well blended.
  2. With clean hands, take portions of the chicken mixture and shape them into small oval-shaped koftas, about the size of your palm.
  3. Preheat your grill to medium-high heat, about 375°F (190°C), and brush the grates lightly with olive oil.
  4. Carefully place the shaped koftas on the grill and cook for approximately 10 to 12 minutes, turning them every 2 to 3 minutes.
  5. While the koftas are grilling, prepare the creamy garlic yogurt sauce by mixing together the plain yogurt, freshly squeezed lemon juice, and a pinch of salt until smooth.
  6. Once the koftas are fully cooked, remove them from the grill, let them rest for a minute, and serve with the garlic yogurt sauce.
