- Preheat the oven to 400°F (200°C) and pierce the sweet potatoes with a fork. Roast for 45-55 minutes until tender.
- In a skillet, heat 1 tablespoon of olive oil. Add diced onions and sauté for about 3-4 minutes until translucent.
- Stir in frozen mixed vegetables and cook for about 5 minutes until heated through.
- Add cooked chicken, chicken broth, garlic powder, thyme, salt, and pepper. Simmer for 5-7 minutes.
- Remove from heat and fold in cottage cheese until fully incorporated.
- Slice open the sweet potatoes and fluff the insides. Spoon the filling into each sweet potato.
- Serve hot, garnished with fresh thyme if desired.
