Preparation Steps
- Begin by trimming about 1 inch off the root ends of the enoki mushrooms. Gently tear them into bite-sized bundles and give them a good rinse under cold water. Let them drain in a colander.
- In a large wok, bring water to a rapid boil over high heat. Carefully add the enoki mushrooms in two batches, blanching each for approximately 1 minute. Drain them thoroughly and transfer to a serving plate.
- In a small saucepan, heat 2 tablespoons of oil over medium heat. When shimmering, add the minced garlic and sauté for about 10 seconds, stirring constantly to prevent browning.
- Add 3 tablespoons of light soy sauce, followed by ½ teaspoon of sugar and the finely chopped scallion. Stir well and let it come to a gentle boil for about 1 minute.
- Immediately pour the hot garlic and scallion sauce over the blanched enoki mushrooms. Serve this delightful dish warm.
