Ingredients

For the Mushrooms
  • 400 g Enoki Mushrooms Perfect for that delightful crunch; choose fresh and firm ones for the best taste.
For the Sauce
  • 2 tablespoons Oil Essential for sautéing the garlic; consider using sesame oil for an extra flavor boost.
  • 2 cloves Garlic Gives a wonderful aromatic depth; opt for freshly minced for the brightest flavor.
  • 3 tablespoons Light Soy Sauce Infuses umami notes into the dish; tamari can substitute for a gluten-free version.
  • 0.5 teaspoon Sugar Balances the savory elements; feel free to omit for a lower-sugar take.
  • 1 Scallion Adds a pop of color and a mild onion flavor; green onions are a great alternative if needed.

Equipment

  • Wok
  • small saucepan
  • Colander

Method

Preparation Steps
  1. Begin by trimming about 1 inch off the root ends of the enoki mushrooms. Gently tear them into bite-sized bundles and give them a good rinse under cold water. Let them drain in a colander.
  2. In a large wok, bring water to a rapid boil over high heat. Carefully add the enoki mushrooms in two batches, blanching each for approximately 1 minute. Drain them thoroughly and transfer to a serving plate.
  3. In a small saucepan, heat 2 tablespoons of oil over medium heat. When shimmering, add the minced garlic and sauté for about 10 seconds, stirring constantly to prevent browning.
  4. Add 3 tablespoons of light soy sauce, followed by ½ teaspoon of sugar and the finely chopped scallion. Stir well and let it come to a gentle boil for about 1 minute.
  5. Immediately pour the hot garlic and scallion sauce over the blanched enoki mushrooms. Serve this delightful dish warm.
