Ingredients
  

For the Bulgogi Marinade
  • 1 pound Beef Sirloin or flank or ribeye
  • 1/4 cup Soy Sauce low-sodium optional
  • 2 tablespoons Sesame Oil can substitute with olive oil
  • 3 cloves Minced Garlic fresh preferred
  • 1 tablespoon Sugar honey or maple syrup is a substitute
For the Sandwich Filling
  • 1 medium Onion yellow or red
  • 1 cup Bell Peppers sliced, can use mushrooms as substitute
  • 1 cup Kimchi or pickled veggies for milder flavor
For Assembly
  • 4 rolls Hoagie Rolls or Sub Rolls crusty and soft rolls preferred
  • 8 slices Cheese (Provolone or American) cheddar or pepper jack as alternatives

Method
 

Step-by-Step Instructions for Kimchi Bulgogi Cheesesteak
  1. Slice beef sirloin into thin strips, no more than a quarter inch thick. Chop onions and bell peppers into similar-sized pieces. Gather all ingredients.
  2. In a large bowl, combine soy sauce, sesame oil, minced garlic, and sugar. Mix until sugar dissolves. Add sliced beef, coat well, and marinate for at least 15 minutes.
  3. Heat a tablespoon of oil in a large skillet over medium-high heat. Add sliced onions and bell peppers. Sauté for about 5 minutes until tender and caramelized.
  4. Push sautéed vegetables to one side, add marinated beef to the skillet and cook for around 5 minutes until browned and cooked through.
  5. Introduce chopped kimchi to the skillet and stir everything together for about 2 minutes.
  6. Preheat broiler. Spoon bulgogi mixture into toasted hoagie rolls. Top with slices of cheese, then broil for about 2 minutes until cheese is bubbly and golden.
  7. Remove from oven and serve immediately, optionally drizzling with soy sauce.
