  • 1 pound Potatoes cut into 1/2 inch cubes; Yukon gold recommended
  • 1 pound Lean Ground Beef 90/10% for less greasiness
  • 1/2 cup Yellow Onion diced; yellow or white works
  • 1 piece Red Bell Pepper diced; can substitute with any color
For Seasoning
  • 1-1.5 teaspoons Kosher Salt and Black Pepper to taste
  • 4 ounces Diced Green Chiles mild or hot based on preference
  • 2.5 teaspoons Chili Powder or taco seasoning as a substitute
  • 1 teaspoon Ground Cumin for authentic flavor
  • 1/2 teaspoon Smoked Paprika regular paprika as an alternative
  • 1/4 cup Cilantro optional
For Creaminess
  • 1/2 cup Shredded Cheese cheddar, colby jack, or pepper jack

Method
 

Step-by-Step Instructions
  1. Heat the oil in a large skillet over medium-high heat until shimmering for about 1-2 minutes.
  2. Add cubed potatoes, sauté for 6-8 minutes until golden and tender.
  3. In another half of the skillet, add ground beef, cook and break apart for about 2 minutes, then add onions and bell peppers, cooking for another 5 minutes.
  4. Sprinkle in salt and pepper, cook for a couple more minutes.
  5. Stir in green chiles, chili powder, cumin, and paprika; cook for 1-2 minutes.
  6. Fold in the sautéed potatoes, cover and cook for another 6-8 minutes.
  7. Sprinkle cheese over the skillet ingredients, cover and cook until melted, about 1 minute.
  8. Garnish with cilantro if desired, and serve hot.
