Method
 

Step-by-Step Instructions for Pollo Asado
  1. Blend all marinade ingredients in a blender until smooth (1-2 minutes). Set aside.
  2. Place chicken in a sealed container, pour marinade over, coat evenly, and refrigerate for at least 15 minutes.
  3. Preheat grill to medium-high (350°F-400°F) and brush grates with olive oil.
  4. Grill chicken for 15-30 minutes, flipping occasionally until internal temperature reaches 165°F.
  5. For pan-frying, heat olive oil in skillet and cook chicken for 5 minutes per side, adding water if marinade dries out.
  6. For air-frying, preheat air fryer to 400°F, cook chicken for 14-15 minutes, flipping halfway.
  7. Serve sliced chicken drizzled with leftover marinade, alongside rice, salsa, or in tortillas.
