Ingredients
  

For the Stir-Fry
  • 1 pound Shrimp, peeled and deveined
  • 2 tablespoons Vegetable Oil or sesame/olive oil
  • 1 whole Red Bell Pepper, sliced
  • 1 whole Yellow Bell Pepper, sliced
  • 1 whole Green Bell Pepper, sliced
  • 3 cloves Garlic, minced or minced shallots
  • 2 tablespoons Soy Sauce or tamari for gluten-free
  • 1 tablespoon Oyster Sauce or hoisin sauce for vegetarian
  • 1 tablespoon Cornstarch (optional) for thickening
  • 1 teaspoon Sesame Oil or olive oil
  • Salt and Pepper to taste

Method
 

Cooking Instructions
  1. Wash and slice the bell peppers into thin strips. Mince three cloves of garlic.
  2. In a large skillet or wok, warm up 2 tablespoons of vegetable oil over medium-high heat for 1-2 minutes.
  3. Add the peeled and deveined shrimp in a single layer. Stir-fry for 3-4 minutes until pink and opaque, then remove from pan.
  4. In the same skillet, toss in the sliced bell peppers and minced garlic, stirring for 3-5 minutes.
  5. Return the cooked shrimp, add soy sauce and oyster sauce, stir to coat, and cook for another 1-2 minutes.
  6. If desired, mix cornstarch with water and add to the skillet, stirring until the sauce thickens for about 1 minute.
  7. Stir everything for an additional minute, seasoning with salt and pepper to taste.
  8. Serve hot over a bed of cooked rice or egg noodles.
