  • 2 cloves Garlic minced
  • 4 cups Fresh Spinach can substitute with frozen spinach
  • 4 large Eggs or egg whites for a lighter option
  • 1 cup Feta Cheese block feta is preferable
  • Red Pepper Flakes optional, to taste
  • 1 pinch Salt
  • 1 pinch Freshly Ground Black Pepper

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C) and brush one side of each slice of bread with olive oil.
  2. Heat a drizzle of olive oil over medium heat in a skillet, add minced garlic and sauté for about 30 seconds.
  3. Toss in the fresh spinach and stir-fry for 2-3 minutes until wilted.
  4. Press the wilted spinach in a fine sieve to remove excess moisture.
  5. In a mixing bowl, whisk the eggs and fold in the spinach, crumbled feta, salt, pepper, and red pepper flakes.
  6. Distribute the filling evenly over the oiled side of each slice of bread.
  7. Bake for 12-15 minutes until golden and puffy, serve immediately.
