  • 350 g Sweet Potato peeled and cubed
  • 240 g Chickpeas 1 can, drained
  • 1 clove Garlic grated
  • 1-2 Scallions/Green Onions finely chopped
  • 4-5 tbsp Cilantro/Fresh Coriander finely chopped
  • 2.5 tsp Cajun Spice Mix / Chipotle/Jerk Spice
  • 2.5 tsp Tomato Puree
  • 1 tsp Miso Paste optional
  • 0.25 tsp Cayenne Pepper optional
For Cooking
  • 2.5 tbsp Olive Oil total (½ tbsp for cooking, 1 tbsp for frying)
  • Fine Sea Salt and Pepper to taste
For Serving
  • 4 Burger Buns any type you love

Step-by-Step Instructions
  1. Peel and cube your sweet potato into roughly 1-inch pieces. In a large non-stick pan, heat ½ tablespoon of olive oil over medium heat. Add the sweet potato cubes along with your Cajun spice mix, stirring frequently. Cook for about 10-12 minutes, until the sweet potato is golden brown and tender yet still slightly firm when pierced.
  2. Once your sweet potato is perfectly cooked, remove it from the heat and let it cool slightly. In a blender, combine the sweet potato with the drained chickpeas, grated garlic, chopped scallions, cilantro, and tomato puree. If using, mix the miso paste with the tomato puree first, then add it. Pulse the mixture until it holds together but remains chunky for a delightful texture.
  3. Transfer the blended mixture to a clean surface or bowl and divide it into four equal portions. Firmly shape each portion into burger patties, making sure they hold together well by pressing the mixture firmly. Place the formed sweet potato burgers on a plate, and they are ready to be cooked!
  4. In the same non-stick pan, heat 1 tablespoon of olive oil over medium heat. Carefully place the formed sweet potato burgers in the pan, leaving space between them. Cook each burger for about 2 minutes per side or until they are lightly browned and crispy. For an extra crunch, you can add a splash more oil after flipping them.
  5. Once the sweet potato burgers are golden and delicious, remove them from the pan and let them rest for a minute.
