- Preheat your oven to 425°F (220°C). Gather parchment paper and a baking tray.
- Grate the super firm tofu using a box grater and spread it evenly on a parchment-lined baking tray.
- In a mixing bowl, toss the shredded tofu with cornstarch, tamari, smoked paprika, garlic powder, and white pepper. Drizzle oil to help the seasoning adhere.
- Spread the seasoned tofu on the baking tray and bake for 15 minutes. Toss and bake for an additional 10 minutes until crispy.
- While the tofu bakes, mash avocado with lime juice, grated garlic, and herbs. Season with salt to taste.
- Toast the English muffins and spread herby avocado on one half, top with smoky tofu mixture and any optional veggies, then close with the other half.
- If meal prepping, wrap each sandwich in parchment and foil and store in the refrigerator for up to 3 days.
