  • 1 teaspoon White Pepper optional, use black pepper if preferred
  • 1 teaspoon Liquid Smoke optional for extra smokiness
For the Avocado Spread
  • 1 large Avocado for creaminess
  • 2 tablespoons Fresh Lime Juice fresh is best
  • 3 tablespoons Herbs (Parsley, Dill, Chives) customize based on favorites
For Assembling
  • 2 pieces English Muffins whole grain for added nutrition
  • Optional Veggies pickled onions, spinach, or tomatoes

Method
 

Cooking Instructions
  1. Preheat your oven to 425°F (220°C). Gather parchment paper and a baking tray.
  2. Grate the super firm tofu using a box grater and spread it evenly on a parchment-lined baking tray.
  3. In a mixing bowl, toss the shredded tofu with cornstarch, tamari, smoked paprika, garlic powder, and white pepper. Drizzle oil to help the seasoning adhere.
  4. Spread the seasoned tofu on the baking tray and bake for 15 minutes. Toss and bake for an additional 10 minutes until crispy.
  5. While the tofu bakes, mash avocado with lime juice, grated garlic, and herbs. Season with salt to taste.
  6. Toast the English muffins and spread herby avocado on one half, top with smoky tofu mixture and any optional veggies, then close with the other half.
  7. If meal prepping, wrap each sandwich in parchment and foil and store in the refrigerator for up to 3 days.
