  • 1 block Tofu Use super firm or firm tofu for the best texture.
  • 2 tablespoons Canola or Vegetable Oil For frying tofu.
  • 1 teaspoon Kosher Salt
For the Sauce
  • 1 tablespoon Coconut Oil
  • 2 tablespoons Shallots Can substitute with onions.
  • 1 tablespoon Minced Ginger Fresh is preferred.
  • 1 can Canned Coconut Milk Full-fat for the best taste.
  • 1 tablespoon Sambal Oelek Adjust based on heat preference.
  • 1 tablespoon Red Curry Paste Substitute with green curry paste if desired.
  • 1 tablespoon Coconut or Brown Sugar Adjust for sweetness.
  • 1 teaspoon Ground Coriander Optional.
For Garnishing
  • 2 tablespoons Scallions Slice thinly.
  • 1 teaspoon Red Pepper Flakes Sprinkle according to spice tolerance.
  • 1 tablespoon Toasted Sesame Seeds

Method
 

Step‑by‑Step Instructions
  1. Begin by pressing the tofu blocks to remove excess moisture, then slice into 3/4 to 1-inch cubes.
  2. Heat 2 tablespoons of canola or vegetable oil in a non-stick pan over medium-high heat and fry tofu cubes until golden brown, about 3 minutes per side.
  3. In a large skillet, heat 1 tablespoon of coconut oil and sauté sliced shallots for 4-5 minutes, then add minced ginger for another 30 seconds to 1 minute.
  4. Pour in coconut milk, sambal oelek, red curry paste, and coconut or brown sugar. Season with kosher salt, stir and simmer for 3-4 minutes.
  5. Turn off the heat and gently fold in the fried tofu cubes until well coated. Adjust seasoning as needed.
  6. Transfer to a serving dish and garnish with sliced scallions, red pepper flakes, and toasted sesame seeds. Serve with jasmine rice and steamed vegetables.
