  • 1 mini watermelon Watermelon or a quarter of a full-sized watermelon
  • 1/4 cup Cilantro fresh, chopped
For the Dressing
  • 1 medium Jalapeño adjust to spice tolerance
  • 2 tablespoons Lime Juice freshly squeezed
  • 2 tablespoons Olive Oil extra virgin
  • 1 teaspoon Honey or maple syrup for vegan
  • 1/2 teaspoon Salt
  • 1/2 teaspoon Chili Flakes or Aleppo pepper

Method
 

Preparation
  1. Cut watermelon into wedges or cubes. Set aside.
  2. Whisk together lime juice, olive oil, honey, salt, and chili flakes in a mixing bowl.

  4. Arrange watermelon on a platter and drizzle dressing over it.
