Ingredients
  

For the Chicken Marinade
  • 1.5 pounds Chicken Thighs Boneless and skinless for convenience
  • 1 cup Plain Whole-Milk Yogurt Greek yogurt can be used
  • 2 tablespoons Neutral Oil e.g., Avocado or Canola
  • 2 tablespoons Lemon Juice Fresh juice for best flavor
  • 1 tablespoon Ginger Finely grated
  • 3 cloves Garlic Freshly grated or garlic paste
  • 1 tablespoon Kashmiri Red Chili Powder Can substitute with paprika and cayenne
  • 1 teaspoon Ground Cumin
  • 1 teaspoon Ground Coriander
  • 1 teaspoon Garam Masala
  • 1 teaspoon Smoked Paprika Optional
  • 1/2 teaspoon Turmeric Optional
  • 1 teaspoon Kosher Salt
  • 1/2 teaspoon Black Pepper
For the Cilantro Rice
  • 1 cup Basmati Rice Rinsed to remove excess starch
  • 2 cups Water or Broth Broth recommended for flavor
  • 1 tablespoon Butter or Ghee Olive oil can be used
  • 1/4 cup Cilantro Leaves Chopped roughly, extra for garnish
  • 1 small Red Onion Lightly pickled for tanginess

Method
 

Marinating and Cooking
  1. In a large mixing bowl, combine yogurt, oil, lemon juice, ginger, garlic, chili powder, cumin, coriander, salt, and pepper. Whisk until smooth. Add chicken and coat thoroughly. Cover and refrigerate for at least 30 minutes, up to 4 hours.
  2. Preheat oven to 450°F (232°C). Place a wire rack on a sheet pan for even cooking when roasting.
  3. In a medium saucepan, combine rinsed rice, water or broth, butter, and a pinch of salt. Bring to a boil, then reduce heat, cover, and cook undisturbed for 15 minutes. Remove from heat and let steam for 5 minutes.
  4. Spread marinated chicken on the prepared sheet pan. Roast for 18 minutes, then switch to broiling for 2-4 minutes until charred and cooked through.
  5. For the onion topping, combine sliced onions with lemon juice and salt. Let sit for 10 minutes.
  6. Once rice is done, fluff with a fork, fold in chopped cilantro, and a drizzle of lemon juice.
  7. Serve on a bed of cilantro rice, topped with roasted chicken, onion topping, and additional cilantro leaves.
