- In a large pot, heat 2 tablespoons of olive oil over medium-high heat. Once shimmering, add 1 chopped yellow onion, 1 chopped carrot, 1 chopped celery stalk, and 2 diced Yukon Gold potatoes. Cook for about 5 minutes, stirring occasionally, until the vegetables are softened and fragrant.
- Add 3 minced garlic cloves to the pot and sauté for another minute until aromatic. Then, stir in 1 diced zucchini, 1 tablespoon of Italian seasoning, and salt and pepper to taste. Continue cooking for 2 minutes.

- Finally, mix in ½ cup of grated Parmesan cheese, ¼ cup of basil pesto, and the juice of 1 lemon. Stir well to combine all the elements.
