For the Pasta
  • 8 oz Bow Tie Pasta can substitute with rotini or mini shells
For the Salad
  • 2 cups Strawberries ripe and hulled
  • 4 cups Baby Spinach can substitute with arugula
  • 1 cup Red Grapes halved
  • 1/2 cup Red Onion diced
  • 1 cup Mandarin Oranges fresh preferred
  • 1/2 cup Feta Cheese crumbled
For the Nuts & Dressing
  • 1/2 cup Poppy Seed Dressing store-bought or homemade
  • 1/2 cup Pecans chopped
  • to taste Salt
  • to taste Pepper

Method
 

Preparation Steps
  1. Cook the pasta in a large pot of salted boiling water for 8-10 minutes until al dente. Drain and rinse under cold water.
  2. In a mixing bowl, combine the cooled pasta with strawberries, grapes, spinach, red onion, and mandarin oranges. Fold gently to mix.
  3. Crumble feta cheese and add pecans to the salad. Fold gently to combine without crushing ingredients.
  4. Drizzle with poppy seed dressing and season with salt and pepper. Toss together to coat the ingredients.
  5. Cover and refrigerate for at least 30 minutes, preferably overnight, to allow flavors to meld.
