Ingredients
  

For the Pie Filling
  • 1 medium eggplant sliced into 1/4-inch rounds
  • 4 medium tomatoes fresh, sliced
  • 1 cup mozzarella cheese shredded
  • 1/2 cup Parmesan cheese grated
  • 1 cup milk or cream or almond milk for vegan option
  • 3 cloves garlic minced
  • 1/4 cup fresh basil chopped
  • 1/4 cup fresh parsley chopped
  • 1 tbsp olive oil for cooking eggplant
  • 1 pinch salt to taste
  • 1 pinch pepper to taste

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C) and lightly grease a 9-inch pie dish.
  2. Slice the eggplant into 1/4-inch rounds, sprinkle with salt, and set aside for 15 minutes.
  3. Pat the eggplant dry using a clean kitchen towel.
Cooking
  1. In a skillet, heat 1 tablespoon of olive oil over medium heat and cook eggplant slices for 3-4 minutes on each side.
  2. Transfer eggplant to a plate and set aside.
Filling Mixture
  1. In a bowl, whisk together 3 eggs, 1 cup of milk or cream, minced garlic, half the mozzarella, half the Parmesan, basil, parsley, salt, and pepper.
Assemble Pie
  1. Layer eggplant in the pie dish, followed by tomato slices, and pour the egg mixture over the layers.
  2. Sprinkle remaining mozzarella and Parmesan on top.
Bake
  1. Bake in the preheated oven for 30-35 minutes or until golden brown.
Cool and Serve
  1. Allow the pie to cool for 5-10 minutes before slicing and garnish with fresh herbs.
