- In a small mixing bowl, combine sweet chili sauce and sambal, whisking until well blended.
- If using wooden skewers, soak them in water for at least 30 minutes.
- Thread shrimp and pineapple chunks alternately onto the soaked skewers.
- Using a pastry brush, generously coat both sides of the assembled skewers with the marinade.
- Prepare your grill by preheating it to medium-high heat, about 400–450°F (200–230°C).
- Place the skewers on the hot grill and cook for 3 minutes without flipping.
- Carefully flip the skewers over using tongs and grill for an additional 2-3 minutes.
- Once cooked, remove the skewers from the grill and let them rest for a minute.
