  1. In a medium saucepan, combine diced Granny Smith apples, white sugar, cornstarch, and ground cinnamon over medium heat. Stir frequently and cook for about 5-7 minutes, until the apples soften and become fragrant. Remove from heat and let cool.
  2. Preheat your oven to 350°F (175°C) and generously grease a 9x13-inch baking pan with unsalted butter.
  3. In a large mixing bowl, cream together room-temperature butter and white sugar until light and fluffy, about 2-3 minutes. Add applesauce, vanilla extract, and large eggs; mix until smooth.
  4. In a separate bowl, whisk together all-purpose flour, baking powder, baking soda, kosher salt, and a pinch of ground cinnamon. Gradually fold this into the wet batter, alternating with Greek yogurt. Mix just until combined.
  5. Pour half of the batter into the prepared pan, spreading it evenly. Spoon the cooled apple mixture over the batter, ensuring it is distributed evenly. Sprinkle half of the cinnamon sugar mixture over the apples, then add the rest of the batter. Finish with more cinnamon sugar on top.
