  • 1 cup Fresh Pineapple diced
  • 1/2 cup Sweet Chili Sauce quality brand recommended
  • 2 tablespoons Soy Sauce or tamari for gluten-free
  • 2 tablespoons Olive Oil or any neutral oil
For Aromatics
  • 2 cloves Garlic minced
  • 1 inch Fresh Ginger grated
For the Finish
  • 2 stalks Green Onions sliced
  • 1 teaspoon Red Pepper Flakes optional

Cooking Steps
  1. Rinse the shrimp under cold water and pat dry with paper towels. Season lightly with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat until shimmering.
  3. Add minced garlic and grated ginger, stirring for about 1 minute until fragrant.
  4. Add the seasoned shrimp to the skillet in a single layer and cook for 2-3 minutes, flipping halfway.
  5. Gently stir in diced fresh pineapple and cook for 1 minute.
  6. Pour in sweet chili sauce and soy sauce, stirring well to coat shrimp and pineapple evenly.
  7. Lower heat and let the mixture simmer for 2-3 minutes.
  8. Before removing from heat, stir in sliced green onions and cook briefly for about 30 seconds.
  9. Taste and adjust seasoning if needed, adding more salt, pepper, or red pepper flakes.
  10. Serve immediately over jasmine rice or in corn tortillas, garnished with extra green onions.
