  1. Begin by dicing the fresh pineapple into bite-sized chunks and slicing the cucumber into thin rounds. Next, thinly slice the red onion and jalapeño (if using), and chop the cilantro finely. If you choose to include feta cheese, crumble it into small pieces.
  2. In a medium mixing bowl, whisk together the freshly squeezed lime juice, honey or maple syrup, and olive oil until well combined. Season with salt and black pepper to taste, and add crushed red pepper flakes if you'd like a hint of spice.
  3. In a large mixing bowl, gently combine the diced pineapple, cucumber slices, red onion, cilantro, and jalapeño. Toss the ingredients carefully to ensure they’re evenly mixed.
  4. Drizzle your prepared lime dressing over the salad mixture. Gently toss everything together until well coated with the dressing.
