Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C). Gather ingredients and tools including a baking sheet lined with parchment paper.
  2. In a small bowl, whisk together peanut butter, soy sauce, maple syrup, lime juice, and sesame oil until well combined. Set aside.
  3. In a mixing bowl, toss diced sweet potatoes with olive oil, salt, and pepper until coated. Spread on baking sheet and roast for 25-30 minutes, flipping halfway.
  4. Mix broccoli, shredded cabbage, grated carrots, and avocado in a large bowl. Toss gently until evenly distributed.
  5. Once sweet potatoes are roasted, layer fresh vegetables in a bowl, top with sweet potatoes and drizzle with peanut sauce.
  6. Garnish with fresh cilantro and crushed peanuts. Serve immediately while warm.
