Step-By-Step Instructions
  1. Prepare Passion Fruit Curd: Combine passion fruit pulp and sweetener in a saucepan over medium heat. Stir until thickened, about 5-10 minutes. Cool and reserve some for topping.
  2. Soak Cashews: Soak cashews in cold water for 4 hours or quick-soak them in boiled water for 30 minutes. Rinse and drain before blending.
  3. Make Crust: Blend vegan cookies, unsalted vegan butter, and sea salt until resembling wet sand. Line a loaf pan with parchment paper, press crust into the bottom, and refrigerate for 30 minutes.
  4. Make Filling: Blend passion fruit curd, soaked cashews, vegan cream cheese, vegan yogurt, and vanilla extract until smooth. Pour into the chilled crust and refrigerate for at least 6 hours or overnight.
  5. Prepare Topping: Heat reserved passion fruit curd until spreadable. Pour and spread over cheesecake.
  6. Chill and Serve: Refrigerate for an additional hour before slicing and serving cold.
