For the Frosting
  • 1/2 cup Sour Cream Greek yogurt or coconut cream can be used.
  • 2 cups Powdered Sugar Sift before use to avoid lumps.
  • 8 oz Dark Chocolate Choose quality chocolate around 60-70% cocoa.

Method
 

Instructions
  1. Preheat your oven to 350°F (175°C) and line a cupcake pan with paper liners.
  2. In a large bowl, whisk together flour, sugar, cocoa powder, baking powder, and baking soda until smooth.
  3. In another bowl, whisk together eggs, oil, and hot coffee or water until well combined.
  4. Pour the wet mix into the dry ingredients and fold gently until just combined.
  5. Fill each liner about two-thirds full and bake for 18 minutes, checking with a toothpick.
  6. Cool in the pan for 5 minutes before transferring to a wire rack to cool completely.
  7. To make frosting, beat butter and sugar until fluffy, then add sour cream, hot water, and dark chocolate until smooth.
  8. Frost completely cooled cupcakes using a piping bag to create swirls.
