Cooking Steps
  1. Step 1: Cook the Filling - In an Instant Pot, heat oil on sauté mode. Add cumin seeds and coriander seeds, cooking until fragrant. Stir in chopped red onion and green chili with salt, cooking until softened. Incorporate turmeric, ground cumin, ground coriander, cayenne, minced ginger, and garlic powder. Mix in cubed potatoes and water; pressure cook. Release pressure, mash potatoes, and fold in peas, cilantro, mint, and lemon juice.
  2. Step 2: Prepare the Pastry - Thaw vegan puff pastry until pliable. Preheat oven to 400°F and line a baking sheet. Roll out pastry into a rectangle. Spread potato filling over one half, add baby greens if desired. Fold pastry to enclose filling, sealing edges with water.
  3. Step 3: Bake the Samosa Pie - Snip vents in the top of the pastry. Place on baking sheet and bake for 18–22 minutes, or until golden brown. Let cool for 5 minutes before slicing and serving.
