  • Nutmeg/Allspice Optional for extra warmth in flavor.

Equipment

  • 9-inch round cake pan
  • mixing bowl
  • Electric mixer
  • spatula

Method

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and prepare a 9-inch round cake pan with non-stick spray or softened butter.
  2. In a large mixing bowl, cream together 1/4 cup of softened butter, 1/4 cup of granulated sugar, and 1/4 cup of dark brown sugar until light and fluffy, about 2-3 minutes.
  3. Incorporate 2 large eggs one at a time into the creamed mixture, then stir in 1/4 teaspoon of vanilla extract.
  4. In a separate bowl, whisk together 1 1/4 cups of all-purpose flour, 1 teaspoon of baking soda, 1 teaspoon of ground cinnamon, and 1/4 teaspoon of salt.
  5. Gradually blend the dry ingredients into the wet ingredients until just combined.
  6. Gently fold in 2 cups of chopped peeled apples and 1/2 cup of chopped walnuts, being careful not to break up the apple pieces too much.
  7. Transfer the batter into the prepared cake pan and smooth the top. Bake for 40-45 minutes, or until a toothpick comes out clean or with a few moist crumbs.
  8. Allow the cake to cool in the pan for 10-15 minutes before transferring it to a wire rack to cool completely.
