  • 1 teaspoon Xanthan Gum or Psyllium Husk Powder optional
  • 1/4 cup Almond Flour optional

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C). Prepare your loaf pan by lining it with parchment paper or greasing it.
  2. In a mixing bowl, whisk together eggs, Greek yogurt, and melted butter or coconut oil until smooth.
  3. In a separate bowl, mix baking powder, salt, xanthan gum or psyllium husk powder, and almond flour if using.
  4. Gradually add the dry mixture to the wet mixture, stirring gently until just combined.
  5. Pour the batter into the prepared loaf pan and smooth the top evenly.
  6. Bake for 35-45 minutes until the top is golden brown and a toothpick inserted comes out clean.
  7. Let cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely.
