Step-by-Step Instructions
  1. Rinse 2 to 3 Persian cucumbers under cold water and slice them at an angle into oval-shaped pieces about ¼ inch thick.
  2. Place the sliced cucumbers in a mixing bowl and sprinkle with salt. Toss gently to coat and let sit for 20 minutes.
  3. After 20 minutes, drain excess water and rinse cucumbers under cold water, then return to bowl.
  4. In a separate bowl, whisk together sesame oil, light soy sauce, sugar, rice vinegar, and chili oil until well combined.
