  • 375 g Box Pasta short pasta like rotini or fusilli

  • 12 oz Can Corn rinse before adding
  • 1 medium Cucumber chopped into bites
  • 1 small Red Onion finely diced for even distribution
  • 1/2 cup Feta or Cojita Cheese sprinkle on top before serving
  • 1/4 cup Cilantro garnish for an extra flavor boost
  • 1 tablespoon Lime Juice final squeeze just before serving

Method
 

Step-by-Step Instructions
  1. In a blender or food processor, combine Greek yogurt, avocado, lime juice, and fresh cilantro. Blend until smooth and creamy. Set the dressing aside to meld flavors.
  2. Bring a large pot of salted water to a boil. Add pasta and cook until al dente, about 8-10 minutes. Drain and rinse under cold water.
  3. In a large mixing bowl, toss together the drained pasta, chickpeas, corn, chopped cucumber, and diced red onion.
  4. Drizzle the creamy dressing over the pasta and toss until combined and glossy.
  5. Transfer to a serving bowl, top with crumbled feta or cojita cheese and additional cilantro. Squeeze lime juice before serving.
