  • 1 bunch Cilantro Use leaves and stems
  • 2 tablespoons Lime Juice Fresh lime is best
  • 1 teaspoon Lime Zest
  • 2 scallions Scallion Chopped; may substitute with red onion
  • 2 cloves Garlic Minced; use fresh for the best flavor
  • 1 medium Cucumber Diced, Persian cucumbers recommended
  • 1 can (15 oz) Beans Black or kidney beans, drained and rinsed
For the Dressing
  • 1 tablespoon Maple Syrup Use honey for non-vegan option
  • 2 tablespoons White Wine Vinegar Can substitute with apple cider vinegar

Method
 

Step-by-Step Instructions
  1. Rinse quinoa under cold running water. Combine with 2 cups of water and a pinch of salt in a saucepan. Bring to a gentle boil, then reduce heat to low, cover, and simmer for 15 minutes until absorbed. Remove from heat and fluff, then let cool.
  2. While quinoa cools, combine cilantro, scallions, garlic, lime juice, lime zest, vinegar, maple syrup, and salt in a food processor. Blend until smooth.
  3. In a large mixing bowl, combine cooled quinoa, drained beans, and diced cucumber. Add any additional vegetables if desired.
  4. Pour dressing over salad and toss together until evenly coated.
  5. Taste and adjust seasonings before serving. Let the salad chill in the fridge for 10-15 minutes if desired.
