Step-by-Step Instructions
  1. Prepare the jasmine rice according to the package directions and keep warm.
  2. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  3. Combine tofu cubes with avocado oil, soy sauce, and cornstarch, tossing until coated.
  4. Spread coated tofu on baking sheet and bake for 20 minutes, flipping halfway through.
  5. Sauté shallots, ginger, and garlic in a skillet with avocado oil until translucent.
  6. Add coconut milk, remaining soy sauce, maple syrup, and paprika, simmer until thickened.
  7. Mix the baked tofu into the sauce with fresh lime juice and serve over rice, garnished with cilantro.
