- Slice the large English cucumbers into thin rounds and toss them with kosher salt in a colander. Let sit for 20 minutes to draw out moisture.
- Rinse the cucumber slices under cold water to remove salt and drain well.
- In a mixing bowl, combine the drained cucumber slices with red onion, green onions, and fresh dill, stirring gently to coat.
- In a separate bowl, whisk together champagne vinegar and honey until smooth.
- Pour the dressing over the cucumber mixture and toss gently to coat, adjusting seasoning with freshly ground black pepper if needed.
- Transfer to a serving bowl, garnish with additional fresh dill, and chill for 10 minutes before serving.
