  • 2 large English cucumbers Sliced into thin rounds
  • 1 teaspoon Kosher salt Adjust to taste
  • 1/2 cup Red onion Finely chopped
  • 1/4 cup Green onions Chopped, using both white and green parts
  • 1/4 cup Fresh dill Chopped
For the Dressing
  • 3 tablespoons Champagne vinegar Or white wine vinegar
  • 1 tablespoon Honey Or maple syrup for vegan option
  • 1/4 teaspoon Freshly ground black pepper

Method
 

Preparation
  1. Slice the large English cucumbers into thin rounds and toss them with kosher salt in a colander. Let sit for 20 minutes to draw out moisture.
  2. Rinse the cucumber slices under cold water to remove salt and drain well.
  3. In a mixing bowl, combine the drained cucumber slices with red onion, green onions, and fresh dill, stirring gently to coat.
  4. In a separate bowl, whisk together champagne vinegar and honey until smooth.
  5. Pour the dressing over the cucumber mixture and toss gently to coat, adjusting seasoning with freshly ground black pepper if needed.
  6. Transfer to a serving bowl, garnish with additional fresh dill, and chill for 10 minutes before serving.
