  • 1/2 cup mayonnaise high-quality recommended
  • 1/4 cup sour cream can be replaced with Greek yogurt
  • 1 medium lime juice freshly squeezed
  • 1 tablespoon taco seasoning use store-bought or homemade

Method
 

Step-by-Step Instructions
  1. In a medium mixing bowl, whisk together ½ cup of mayonnaise, ¼ cup of sour cream, the juice of one lime, and 1 tablespoon of taco seasoning until smooth and well combined. Cover and chill.
  2. In a large mixing bowl, combine 4 cups of coleslaw mix, 1 diced red bell pepper, and 1 diced orange bell pepper. Add 1 can of well-rinsed black beans and 1 can of well-drained corn. Toss in ¼ cup of chopped cilantro and 1 finely minced jalapeño.
  3. Pour the chilled dressing over the vegetable mixture. Gently toss to coat all ingredients without bruising the veggies.
  4. Cover the bowl and refrigerate for at least 30 minutes to allow flavors to meld.
  5. Serve in a bowl garnished with cilantro. Enjoy with grilled meats, tacos, or as a snack.
