- In a medium mixing bowl, whisk together ½ cup of mayonnaise, ¼ cup of sour cream, the juice of one lime, and 1 tablespoon of taco seasoning until smooth and well combined. Cover and chill.
- In a large mixing bowl, combine 4 cups of coleslaw mix, 1 diced red bell pepper, and 1 diced orange bell pepper. Add 1 can of well-rinsed black beans and 1 can of well-drained corn. Toss in ¼ cup of chopped cilantro and 1 finely minced jalapeño.
- Pour the chilled dressing over the vegetable mixture. Gently toss to coat all ingredients without bruising the veggies.
- Cover the bowl and refrigerate for at least 30 minutes to allow flavors to meld.
- Serve in a bowl garnished with cilantro. Enjoy with grilled meats, tacos, or as a snack.
