For the Pasta Bake
  • 2 cups Brussels Sprouts fresh or frozen, cut in halves
  • 20 ounces Cheese Tortellini refrigerated or frozen
  • 1 pound Boneless Skinless Chicken Breast can substitute with cooked rotisserie chicken
  • 6 slices Bacon or turkey bacon for a leaner option
  • 2 cloves Garlic minced
  • 2 cups Low Sodium Chicken Broth or vegetable broth
  • 1 cup Fat-Free Half and Half or regular half and half
  • 1/2 cup White Cooking Wine or chicken broth
  • 3 tablespoons Reduced Fat Margarine or olive oil
  • 1/4 cup Flour or cornstarch for gluten-free
  • 1 cup Reduced Fat Shredded Mozzarella or regular mozzarella
  • 1/4 cup Parmesan Cheese or nutritional yeast for dairy-free
  • to taste Salt
  • to taste Pepper

  • 1/4 cup Extra Parmesan Cheese

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C).
  2. In a large pot, place the bacon over medium-high heat. Sauté until crispy, about 5-7 minutes. Transfer to a plate and crumble once cooled.
  3. Melt reduced-fat margarine in the same pot over medium heat. Add minced garlic, cooking for 1-2 minutes until fragrant. Pour in chicken broth and white cooking wine, simmer for about 5 minutes.
  4. Stir in fat-free half and half, mozzarella cheese, and flour, continuously stirring until it simmers and thickens, about 3-4 minutes.
  5. Add Brussels sprouts, cheese tortellini, cooked chicken, and half of the crumbled bacon. Season with salt and pepper. Stir until well combined.
  6. Carefully pour the mixture into a greased 13x9-inch baking dish. Sprinkle remaining Parmesan cheese and crumbled bacon over the top.
  7. Bake for 35 to 40 minutes until bubbly and golden brown. Broil for an additional 5 minutes for a crispy topping if desired.
  8. Once baked, let the dish rest for about 5 minutes before serving.
