  • 2 packs Ramen Noodles omit seasoning packets
For the Spice and Color
  • 1 teaspoon Turmeric or curry powder
  • 1 teaspoon Sweet Paprika or smoked paprika

Step-by-Step Instructions
  1. Pre-Boil the Carrots: Bring a small pot of water to a boil and simmer carrot pieces for 3-5 minutes until slightly tender. Drain and set aside.
  2. Sauté the Vegetables: Heat coconut oil in a large pan over medium heat. Add red onion and sauté for about 4-5 minutes until soft and translucent.
  3. Add Garlic and Chicken: Mix in minced garlic, cooking for another minute until fragrant. Add shredded chicken and diced red bell pepper, then sprinkle in turmeric and paprika.
  4. Incorporate the Carrots and Hot Sauce: Add pre-boiled carrots and a dash of hot sauce, stirring to blend flavors.
  5. Pour in Coconut Milk and Broth: Add coconut milk and water or broth, stirring and heating through until steaming, about 3-5 minutes.
  6. Cook the Ramen Noodles: Add ramen noodles and cook for 2-3 minutes until just tender. Be careful not to overcook.
