  2. Prepare the Tofu: Drain and press the tofu for 10 minutes, then slice into 1-inch strips.
  3. Make the Batter: In a bowl, combine flour, cornstarch, baking powder, and salt. Gradually add water to form a thick, smooth batter.
  4. Coat the Tofu: Dip each tofu strip in the batter, then roll in panko breadcrumbs.
  5. Bake the Tenders: Preheat oven to 350°F (175°C), arrange on a lined baking tray, spray with oil, and bake for 30–35 minutes, flipping halfway.
  6. Final Coat: Brush each tender with the mustard sauce and return to oven for 5–8 minutes to set the glaze.
