- In a medium bowl, combine crumbled feta cheese, chopped dill, fresh mint, lemon zest, and black pepper.
- Take one sheet of phyllo pastry, brush lightly with olive oil, and layer a second sheet on top, brushing with olive oil again.
- Carefully slice the layered phyllo sheets into four equal strips.
- Place a tablespoon of the feta filling at one end of each phyllo strip, fold sides over, and roll tightly.
