  • 3 lbs Chuck Roast can be replaced with brisket
  • 1 tbsp Kosher Salt sea salt can be used
  • 2 tbsp Vegetable Oil sesame oil can also be used
  • 1 large Sweet Onion or yellow onion
  • 4 cloves Garlic Cloves can use garlic powder
  • 1 inch Fresh Ginger or ground ginger
For the Sauce
  • 3 tbsp Gochujang Paste or harissa, sriracha
  • 2 tbsp Brown Sugar can use honey or maple syrup
  • 1/2 cup Low-Sodium Soy Sauce or Tamari coconut aminos as soy-free alternative
  • 2 cups Beef Stock or chicken stock
For Garnish
  • 1/4 cup Fresh Cilantro or green onions
  • 1 cup Kimchi traditional accompaniment

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C).
  2. Generously season the chuck roast with kosher salt on all sides.
  3. In a large Dutch oven, heat vegetable oil over medium-high heat and sear the chuck roast pieces for 3-4 minutes on each side.
  4. Add sliced sweet onions, minced garlic, and grated ginger to the pot. Sauté for about 5 minutes until softened.
  5. Stir in the gochujang paste, brown sugar, and soy sauce, mixing well.
  6. Pour in the beef stock and bring to a gentle simmer over medium heat.
  7. Cover the Dutch oven with a lid and transfer to the oven. Cook for approximately 2 hours.
  8. Remove the pot roast from the oven, let it rest, and serve with fresh cilantro and kimchi.
