Method
 

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C) and prepare a muffin tin by greasing or lining it.
  2. Roll out the pie crusts and cut out circles using a 3.5-inch round cutter. Press into the muffin cups.
  3. In a bowl, whisk together eggs, whole milk, heavy cream, salt, and pepper until fluffy.
  4. Stir in spinach, onion, ham, and cheddar cheese to the egg mixture until evenly mixed.
  5. Pour the mixture into muffin cups, filling almost to the top.
  6. Bake for 25-30 minutes or until golden brown and set in the middle.
  7. Cool for 5 minutes before removing from tin. Serve warm or freeze for later.
