Method
 

Crust Preparation
  1. Preheat oven to 350°F (175°C) and grease an 8x8-inch pan.
  2. Combine melted butter, flour, and sugar in a medium bowl until crumbly.
  3. Press mixture into the bottom of the greased pan and bake for 10-12 minutes.
Pineapple Filling Preparation
  1. Whisk together eggs, sugar, crushed pineapple, and vanilla until smooth.
  2. Gently fold in shredded coconut if using.
Combine and Bake
  1. Pour pineapple mixture over the pre-baked crust and bake for 20-25 minutes.
  2. Allow to cool completely in the pan on a wire rack.
