Ingredients
  

For the Meatloaf
  • 1 lb Ground Pork or chicken/beef
  • 1 cup Panko Bread Crumbs substitute with regular breadcrumbs if needed
  • 1 large Onion or shallots
  • 3 cloves Garlic fresh recommended
  • 2 tbsp Gochujang or red chili paste
  • 2 stalks Green Onions or any onion
  • 1 tsp Kosher Salt decrease if using table salt
  • 2 large Eggs omit for vegan
For Cooking
  • 1 tbsp Vegetable Oil or any neutral oil
For the Glaze
  • 1/4 cup Apricot Jam
  • 2 tbsp Soy Sauce
  • 1 tbsp Rice Wine Vinegar or apple cider vinegar
  • 1 tbsp Honey adjust to taste
  • 1 tbsp Sesame Oil or another oil
  • 1 clove Garlic fresh preferred
For Garnish
  • 1 tbsp Sesame Seeds optional, or chopped nuts

Method
 

Directions
  1. Preheat your oven to 350°F (175°C).
  2. In a skillet, heat vegetable oil over medium heat, sauté onion for 10 minutes, add garlic for 2 minutes, then remove from heat.
  3. In a mixing bowl, combine cooled onion and garlic with green onions, gochujang, eggs, and kosher salt.
  4. In a separate bowl, mix ground pork and panko, then fold in the gochujang mixture until combined.
  5. Transfer the mixture into a greased loaf pan or shape into a loaf on a baking sheet.
  6. Bake for approximately 40 minutes, or until the internal temperature reaches 140°F (60°C).
  7. For the glaze, whisk apricot jam, gochujang, vinegar, honey, soy sauce, sesame oil, and garlic until smooth.
  8. Glaze the meatloaf with the mixture and continue baking for another 10-15 minutes until internal temperature reaches 160°F (71°C).
  9. Let the meatloaf rest for 10 minutes before slicing.
