For the Baconnaise Sauce
  • 0.5 cup Mayonnaise
  • 2 tablespoons Ketchup
  • 2 tablespoons Mustard

  • 1 tablespoon Apple Cider Vinegar
  • 1 tablespoon All-Purpose Rub Salt, pepper, garlic.

Method
 

Steps for Smash Burgers
  1. Prep the Ingredients: Form the ground chuck into eight 1/3 pound balls and chill for 30 minutes. Thinly slice onions, remove moisture, and refrigerate. Cook and chop bacon until crispy.
  2. Make the Baconnaise Sauce: Combine mayonnaise, ketchup, mustard, crispy bacon, Worcestershire sauce, vinegar, rub, and red pepper flakes in a bowl. Mix until creamy and chill.
  3. Cook the Burgers: Heat a griddle or skillet and coat with avocado oil. Smash chilled burger balls on the griddle and cook for 3-4 minutes, seasoning with salt and pepper.
  4. Flip & Add Cheese: Spread mustard on each patty, flip, and add cheese. Cook for an additional 3 minutes until cheese melts.
  5. Toast the Buns: Toast burger buns cut-side down on the griddle for 2-3 minutes until golden brown.
  6. Assemble the Smash Burgers: Spread baconnaise sauce on the bottom bun, stack two burgers, add more baconnaise, and place the top bun on.
